Each class focuses on a specific tea category, guiding you through tasting techniques using traditional cupping sets while exploring origin, processing methods, and flavor profiles. Participants will develop a deeper understanding of how tea is cultivated, manufactured, brewed, and stored—while refining their palate through guided tastings. Attend one session or experience the full series to gain a comprehensive knowledge of tea from around the world.


Tea Flavor Journey – White Teas

Discover delicate white teas from China and India, known for their minimal processing and subtle flavor profiles. Learn how careful, controlled withering preserves their gentle aromas and nuanced character, along with proper preparation techniques to bring out their best qualities.


Tea Flavor Journey – Yellow teas

Yellow teas are rare, primarily produced in China and Korea, and crafted using a lightly fermented process rather than full oxidation. What sets them apart is the slower, extended withering and gentle drying, which produces their distinctive mellow flavor. Harvested exclusively in early spring, these teas capture the freshest, most delicate leaves of the season. (This lecture is offered depending on yellow tea availability.)


Tea Flavor Journey – Green Teas

Explore green teas from China, Japan, Sri Lanka, and Nepal. Compare processing styles and uncover the fresh, vegetal, and nuanced characteristics of each. Learn about the process of ‘fixation’ or more commonly known as ‘kill-green’ during the traditional pan-firing process.
