Steeped in Culture: Tea Journey through Taiwan

Taiwan is home to some of the world’s most refined oolong teas, shaped by dramatic mountain terroir, misty climates, and generations of master craftsmanship. Participants will gain an in-depth understanding of how oolong teas are grown, processed, and perfected—from fresh leaf picking, to withering, oxidation, rolling, and final firing.

Taiwan’s oolongs are especially renowned for their highly skilled light oxidation techniques, producing some of the most aromatic teas in the world. Throughout the lecture, we will also explore Taiwanese tea culture beyond production, with guided tasting and sensory experiences.

Taiwanese teas are globally celebrated for their high-mountain varieties, valued for their complexity, natural sweetness, and distinctive creamy or buttery mouthfeel. Signature styles include the floral and refreshing Baozhong, the rich and roasted Dong Ding, and the rare insect-bitten Oriental Beauty—each representing a unique expression of terroir, climate, and craftsmanship.

In every cup, we taste not only tea—but a deeper understanding of how place, people, and tradition are steeped together in each tea.

Warm Gatherings ~ A Thanksgiving Tea & Food Pairing

Experience a tasting lecture that explores how tea can complement a Thanksgiving table with warmth, spice, and seasonal depth. This session highlights the tastes and aromas of autumn— caramelized fruit, baking spices, and toasted nuts—and how they translate into thoughtful holiday tea pairings.

Participants will learn how to evaluate tea through aroma, body, and texture, while discovering how specific seasonal blends can elevate traditional Thanksgiving dishes such as roasted turkey, stuffing, sweet potatoes, cranberry sauces, and desserts. The session blends guided tasting and pairing principles focused on seasonal hospitality.

Harmony in a Cup: The Art of Chinese & Japanese Tea Ceremonies

This engaging lecture explores the practice of tea ceremonies in China and Japan. Participants will examine how, from its early discovery, tea evolved into a refined cultural ritual reflecting values such as harmony, respect, purity, and tranquility.

The unique types of teas produced in both countries will be discussed, highlighting their distinctive profiles: Japanese teas are primarily green teas with fresh, grassy, and slightly sweet flavors, and steamed to preserve their bright color and vegetal taste. Chinese teas include all major categories (white, yellow, green, oolong, black and dark), typically pan-fired to create toastier flavors and known for their wide range of floral, nutty, fruity, and earthy notes.

Ultimately, participants will leave with a deeper appreciation of how tea serves not only as a beverage, but as a living expression of culture, philosophy, and human connection in both traditions.
