Winter Contest Winning Submission:

GOLDEN GLUTEN-FREE MUFFINS

Featuring The Cozy Tea Cart’s Montana Gold Tea

 

North meets south in this delightful muffin. Montana Gold tea, rich with the warmth of cinnamon and orange, meets tropical coconut to make a unique and tasty combination. This gluten free muffin will delight people with wheat intolerance. It’s so similar to the “real thing” you and your guests may never know the difference.

 

Step 1. Steep one cup of The Cozy Tea Cart’s Montana Gold tea and chill.

 

Step 2. Topping

¼ cup packed rapidura sugar

2 tbsp almond meal

½ tsp ground cinnamon

1 tbsp melted butter

 

Mix all together in a small bowl and set aside.

  

Step 3. Muffin

1 cup brown rice flour

1/3 cup almond meal

¼ cup tapioca flour

¼ cup potato starch

½ granulated sugar

1 ½ tsp xanthan gum

2 tsp baking powder

¼ tsp baking soda

½ tsp sea salt

2 tbsp orange zest

½ cup unsweetened coconut flakes

¾ cup Steeped Montana Gold tea

¼ canola oil

2 eggs

 

Mix all dry ingredients together. Mix wet ingredients together. Pour wet into dry and stir until just mixed. Spoon into greased muffin tins, top with topping and let sit for 30 minutes. Bake in 350 degree preheated oven. Bake for 25 minutes or until warm golden brown.

Contest:  Tea is not just for sipping anymore.  Master Chefs all around the world have been cooking with tea for years, (Documents dating back to the Tang Dynasty and Edo period report tea being used in foods for added health benefits.)  It is becoming increasingly popular today because chefs have realized that people's health aims and hunger for wellness have risen. Leading Chefs have realized the beneficial health benefits and quality of flavors from tea absorbed into foods.

 

In this contest, use one of The Cozy Tea Cart’s fine quality teas to create the perfect recipe.  It can be a food item such as a bread, main course, or dessert and MUST be your own recipe.  The recipe doesn’t have to be elaborate or difficult to make.  To help you with ideas on your own recipes, we have copies of “Eat Tea” by John Harney and Joanna Pruess for sale in The Cozy Tea Cart.

 

A copy of the winning recipe will be published in our March, 2007 newsletter.  The April and May 2007 newsletters will have a link to your recipe on our web site.  All submissions should be delivered to The Cozy Tea Cart, 40 Mountain Rd., Brookline, NH 03033, before February 28, 2007.  Your submission will be judged according to our Seasonal Contest Rules.

 

Entry Form:

You’ve probably had a lot of cups of tea while working on your artwork, and you think you’ve created your most interesting piece yet.  Now is the time to submit it!  Here’s what we’ll need:

  • First and Last Name

  • Complete Mailing Address (street, city, state, zip)

  • E-mail Address

  • Recipe Title

  • Original Recipe

  • Digital picture of the prepared food item.  (If you don’t have a digital camera, bring your prepared food item by the tea shoppe and we will photograph it for you.)

     

Rules:

  • Winners must be 18 years of age or older.

  • Only one entry per person for each contest (all additional entries will be removed from consideration).

  • The contest is open to residents of the USA and Canada only.

  • The Cozy Tea Cart's tea must be used in all entries.

  • We will draw ONE winner per contest.  Winners are chosen at random from all properly completed entries.  Decision of the judges is final.

  • Entry forms MUST be filled in completely in order to be considered for the contest, and in order to receive your prize.

  • No substitutions of the prizes are offered.  The winner agrees to accept responsibility of their tea prize.

Material submitted for these contests will be reviewed following normal review protocol.  All items presented will be reviewed without author identification by the members of the judging panel.  The monthly selection will be based on the uniqueness of the idea, the quality of the writing or artwork, and suitability to the theme. All materials must be submitted by the last date of the seasonal contest month. 

 

The winner will be notified at the end of the contest to tell you how to claim your prize.  The winner must sign a waiver allowing The Cozy Tea Cart to publish their writing piece, recipe, or post a picture of their artwork on our web site, and be announced in our monthly newsletter.  Full credit will be given to the owner.
